The Community Edition is a genuinely complete restaurant OS — not a demo. The commercial suite is the marketplace layer: rider dispatch, multi-vendor orchestration, and the tools operators pay for.
Everything a single restaurant needs to take orders, run the pass, and get paid. Fork it, modify it, run it — the license requires you to share your changes, that's the deal.
